The invention provides food products and methods for making the food products. The products comprise a container comprising a meat emulsion encasing one or more hydrocolloid dispersions wherein the one or more hydrocolloid dispersions and the meat emulsion have a different appearance and texture. Preferably, the one or more hydrocolloid dispersions are xanthan, carboxy methyl cellulose, konjac, guar, agar agar, gum arabic, locus bear gum, cassia, acacia, alginate, carobe, or a combination thereof.

The present invention relates to a beverage preparation device (100) including a plurality of storage chambers for storing several ingredients having each a different taste property, a user interface (14) for receiving data representing a user's preferred taste, a taste management unit (10) and a generator (15). The taste management unit (10) includes a memory (11) for storing a reference table which describes the taste property of each ingredient and a processor (12) for determining the dosage of each ingredient to be used according to the reference table and the user's preferred taste. The generator (15) generates beverages from the several ingredients according to the determined dosage. The main advantage of this invention is that the beverage preparation device (100) can provide beverages according to the user's desired taste.

A method of heating food is provided, which employs a cooker provided with a control program and a reader to identify a food package attached with a coded object which embodies the parameters associated with the food package, the parameters including temperature and time, whereby the contents of the parameters of the coded object can be read by the reader and compared by the control program so that the control program can issue commands to conduct a heating procedure according to the contents of the parameters of the coded object. Thus, the food package can be heated or cooked more easily, conveniently, safely, and economically, and the disadvantages resulted from incorrectly manual operations can be avoided.

The present disclosure is concerned with thermoformable webs with improved puncture resistance suitable for use in semi-automatic horizontal form fill and seal (HFFS) packaging machines and a process for packaging hard food items with sharp angular surfaces using such webs in such machines. The webs have a double wall partially laminated structure. The structure is conveniently formed by adhesively laminating two component films in a face to face configuration using a pattern of adhesive which leaves a substantial portion of the two facing surfaces unlaminated. The lamination just needs to be sufficient that the two component films will hot form together when they are vacuum drawn into a die to form a cavity for packaging the food items. The lamination pattern can vary from just edge strips to the edge strips and a honey comb pattern or a pattern of dots over the facing surfaces between the edge strips.

The inner gripper includes an inner gripper shaft and the outer gripper includes an outer gripper shaft both of which shafts protrude axially from the drum. Each associated gripper chamber, with its associated gripper, revolves on different radii with respect to the rotational axis such that a chamber is formed radially between an outer circumference of the inner gripper shaft and an inner circumference of the outer gripper shaft. A fluid is insertable into the chamber through a channel, which fluid is pressable from the chamber into the gripper chambers.

The invention relates to a method and an apparatus for producing a dough, in particular a dough for bread for toasting, by means of an extruder. The extruder has at least two extruder shafts along which kneading elements for admixing a gas into a dough are arranged in at least one kneading section. Gas can be drawn off along a gas-removal section and therefore a defined proportion of the gas is established in the dough. Furthermore, a mould for discharge of the dough is arranged at the output of the extruder. A nozzle device is arranged at an input region of the extruder, it being possible for said nozzle device to be used to spray a preparation liquid onto a dough base material under pressure in order to form a starter dough.

An invention directed to the production of processed or cooked cheese by concurrently and continuously portioning, pulling to stretch, molding and cooling to set said cheese through a series of interconnected tunnels casted within two overlaying rotating belts. The overlaying belts having a series of grooves with negative dimension of a desired cross sectional shape for molding purposes. The two belts overlay each other such that the grooves combine to form a continuing tunnel along the length of the two belt assembly. Cheese is pulled into and through each tunnel wherein a given amount of pressure and cooling affect is applied. Released cheese ribbons of molded shape are ready for immediate packaging and storage.

Methods of preserving fresh produce with a produce preservative which extends the shelf life of fresh produce, particularly cut fresh produce, and preserves the texture, flavor, appearance, crispness, and color of the fresh produce, particularly the exposed surface of the fresh produce, are provided. The method comprises: providing a solution of produce preservative comprising: water; a preservative cation which is selected from the group consisting of a strontium ion, lithium ion, barium ion, aluminum ion, copper ion, ammonium ion, iron ion, manganese ion, potassium ion, or mixtures thereof; and ascorbate ions, or erythorbate ions; wherein the ascorbate ions or erythorbate ions and the preservative cation are present in an ion ratio of preferably from 0.2:1 to 8:1, more preferably 0.75:1 to 8:1, even more preferably from 1:1 to 4:1, yet more preferably 1.5:1 to 3:1; most preferably 1.1:1 to 2.5:1; and, applying said produce preservative to the produce. The invention also relates to fresh produce preserved with the produce preservatives.

A method for preparing cooked oat cereal into a cold, cohesive mass for convenient, ready-to-eat serving and consumption using traditional eating utensils. This food product contains two base ingredients, rolled oats and water. A uniform weight ratio of rolled oats to water is used to achieve complete cooking of all oat cereal particles using a microwave cooking process for time duration relative to the weight of rolled oats used in product preparation. A refrigeration cooling process for minimum time duration proportional to ingredient quantity is used to create a solid composition of all cooked oat cereal particles in a sealed, airtight preparation container. The resulting food product retains its mass and shape when removed from its preparation container for ready-to-eat serving or storage, and it has sufficient density and cohesion for partitioning into solid sections.
