A food product and method are provided. The food product includes a pulse having a total water content below that of a fully hydrated pulse and a chewier texture. It is formed from a dry pulse and is hydrated, but only partially, resulting in a total water content in the range of between about 0.25 grams water/gram dry matter and about 0.75 grams water per gram dry matter. The pulse is in an intact form and has not been fully hydrated after harvest.

The low calcium sensitive high acyl gellan gum has superior suspension performance for colloidal stability compared to other high acyl gellan gums. The low calcium sensitive high acyl gellan gum is prepared by adjusting the pH of a gellan fermentation broth (polymer solution) prior to pasteurization and reducing the pasteurization hold time compared to conventional pH levels and hold times.

The Present Invention is an uncoated reduced fat, high fiber, high protein, and low calorie roasted snack peanut. The uncoated snack peanuts are manufactured using a physical process comprising expelling the oil from nutmeat kernels (defatting) using a novel pressing process that takes less than a minute. The defatting process deforms the nuts. The peanuts are reformed to their original shape using water. Then the reformed nuts are annealed using cold water to produce hardened nuts. The peanuts are then dried and roasted using state-of-the-art technology. Prior art processes that expel the oil from nuts and reconstitute them produce nuts that easily break and flake. Most of these nuts have an undesirable taste. By contrast, the uncoated, defatted peanuts of the Present Invention have hardness, texture, taste, aroma, and a physical appearance closely approximating that of natural nuts. The shelf life is improved relative to the prior art processes.

An infant, child or adult may consume the bioconsumable liquid during which the xylitol acts to mitigate tooth decay. The bioconsumable liquid may also be frozen in an ice pop configuration and consumed by a child or an adult. The ice pop retains an acceptable flavor profile and also mitigates tooth decay.
