Compositions are disclosed that include undenatured whey protein and glycine. The undenatured whey protein is preferably included at a final concentration of about 20%-80%, while the glycine is present at a final concentration of about 5%-35%. The whey protein has not been exposed to acid hydrolysis and, preferably, includes cold cross-flow membrane filtrate. The glycine is preferably 20-80 mesh in size, and exhibits a U.S. Pharmacopeia (USP) 28 grade. The composition further includes several vitamin and mineral cofactors, namely, selenomethionine, nicotinamide adenine dinucleotide (NADH), and Vitamin B3.

The apparatus (100) includes a die head (118) for extruding a main comestible material to form an extrudate body. A plurality of nozzles (160, FIG. 7) is located within the die head for introducing a comestible fluid into the extrudate body to form a plurality of filled capillaries. A control system (182) is capable of selectively connecting at least one of the nozzles to any one of at least two different fluid filling sources (150A, 15 OB). The control system may be capable of connecting each of the nozzles independently to different fluid sources or the nozzles may be arranged into two or more groups of flu idly interconnected nozzles that can each be independently switched between different fluid sources. The apparatus can be used to form products in which the fillings in the capillaries are varied or in which an image is formed in cross section. The apparatus can also be used to switch production between products having different fillings without stopping extrusion.

Packaging of respiring biological materials, particularly bananas and other fruits, in sealed containers. The containers preferably include a gas-permeable membrane comprising (1) a microporous film, and (2) a polymeric coating on the microporous film. Using appropriate containers and appropriate controlled atmospheres around the container, the respiring materials can be stored and/or ripened under controlled conditions. Bananas can be ripened while they are being transported, or in conventional ripening rooms without opening the containers in which they have been transported. The ripe bananas are less dehydrated and remain in a satisfactory ripened state for longer periods of time. The gas-permeable membrane can preferably take the form of either a “curtain” or “cartridge” and the R ratio of the membrane may be optimized by adjusting the differential pressure across the membrane.

A process for preparing a pineapple confectionary item for a fruit arrangement comprising the steps of: providing a piece of sectioned pineapple having pineapple meat and core intact; cutting the sectioned pineapple into a desired shape utilizing a shape cutter with the shaped pineapple having a first portion and a second portion. Once the pineapple is shaped, a skewer channel is created within the pineapple meat and core. Once the skewer channel is created, a coating of dark chocolate is applied to the first portion. A skewer is subsequently inserted into the skewer channel and the dark chocolate layer is allowed to cool. Once the dark chocolate is cooled, a coating of white chocolate is applied to the second portion; and subsequently allowed to cool.

An outdoor cooker is double walled insulated and has a completely removable internal firebox that defines a vertical column which includes a fuel and fire chamber separated from an ash and air chamber by a fire grate. The perimeter wall defines an air inlet that opens the air and ash chamber to an air supply passage through the cooker body, and further defines an exhaust outlet that opens into the inner chamber of the cooker. Consistent low cooking temperatures (200°-250° F.) without resupplying fuel or opening the outdoor cooker for 10-20 or more hours are easily accomplished. The outdoor cooker is also versatile enough to directly cook other meats, such as steaks, at high temperatures for total cook times that may only last a matter of minutes. The outdoor cooker can also be configured for medium temperature indirect and direct barbequing.

A process for preparing a frozen dessert having stabilized ice crystals to imitate the taste of ice cream, which process comprises: (A) providing a KEY ingredient, (B) adding a freeze inhibitor, in suitable amounts, and adequate sweetness to attain a stabilized starting freezing point of about 27° F. and melting point at about 17° F.; (C) adding a stabilizer in suitable amounts to create a microcrystalline ice particles; (D) rapidly freezing the mix until frozen solid at the temperature at which ice cream freezes; (E) masticating the frozen product to yield a soft serve dessert product for immediate consumption, said product having a contantometer rate significantly less than that of prior art desserts.
