Tool and Method for Tortilla Frying

A tool and method allow cooking a tortilla in a generally flat state, in a shallow amount of oil. A central strip is held out of the oil and isn't fried. Side strips to the central strip are less fried. This produces a taco shell that is flexible at the bottom, allowing a living hinge, while crispy in its main portions. A raising bar and left and right hold-downs comprise described tools.

BEVERAGE WHITENING COMPOSITION AND METHOD

A beverage whitening composition for whitening coffee, tea or hot chocolate is described. The composition replaces conventional milk in a reduced volume. The target volume for reduction is 45% to 95%. The composition comprises 0.5-80% by weight of cream having from 5-42% by weight fat; 15-97% by weight of milk having from 0.1-3.25% by weight fat; serum solids, such as skim milk powder; and optionally a stabilizer. When used in the amount of the target volume, the composition has the beverage whitening ability of the selected milk to be replaced. The composition is useful for replacing skim, 1%, 2% or whole milk in dispensers containing bags, to reduce frequency of bag replacement. The composition may be steamed and used to whiten a steamed milk beverage, such as a latte.

A process for preparing a clarified maté extract, a maté beverage base formulation and a maté beverage are disclosed. A maté extract, which is rich in natural caffeine, theobromine, theophylline and antioxidant compounds is clarified by adding gelatin and silica sol and freezing the resulting extract. The frozen extract is then thawed and a clarified liquid supernatant is separated from the solids to obtain a clarified maté extract. The clarified maté extract is used to make a maté beverage formulation which may be used to make maté beverages, such as carbonated maté beverages.

A method for heating a material to be heated continuously by an internal heating system while moving the material in a tube comprising: (a) arranging the tube vertically or substantially vertically (a tilt of not greater than 15°) and heating/molding a mixture while feeding the mixture upward from a bottom in the tube and/or (b) heating/molding the mixture while rotating the tube around a rotation axis, the rotation axis being a center line in a length direction of the tube. The internal heating system is preferably microwave heating, Joule heating, or high-frequency heating. The method for producing a processed protein food employs the heating/molding method for production of a processed protein food wherein a material to be heated, which is a fluid mixture containing a protein, a lipid, and water, is molded by thermally coagulating the mixture continuously by an internal heating system while moving the mixture in a tube.
